Swedish Recipes
One can find Swedish cuisine to be really varied yet quite simple in the way it is probably prepared. One can also see foreign influences as far as the cuisine is concerned. In Sweden, one can notice a variety of items that involve the use of bread; sweetened bread rates high amongst many who still prefer the traditional kinds of Swedish bread. The pea soup is one of the traditional dishes of Swedish cuisine and potatoes also form an important ingredient for most recipes. Here are some yummy dishes which you can try at home.
Swedish Crispy Cookies
Ingredients
White sugar (1/2 cup)
Packed brown sugar (1/2 cup)
All-purpose flour (2 cups)
Baking soda (1 teaspoon)
Cream of tartar (1 teaspoon)
Chopped walnuts (1/2 cup)
Granulated sugar for decoration (1/3 cup)
Shortening (1/2 cup)
Butter (1/2 cup)
Egg (1)
Vanilla extract (1 teaspoon)
Preparation
You will firstly need to preheat the oven to 350 degrees F. Then blend the sugar, butter and the shortening till it turns into a smooth mixture. Then, stir in the vanilla extract along with the egg. Then, sift the baking soda, cream of tartar and the flour together. Mix some sugar into this mixture. Then you would need to roll the dough into small-sized balls. These balls have to be rolled into some chopped nuts. This should be followed by rolling the balls into some sugar mixture. Use a non-greasy cookie sheet to place these balls and bake the same for a period of 12 to 15 minutes. Once the cookies turn light brown, let them cool and they would be ready to be eaten!
Yellow Pea Soup
Ingredients
1 pound whole dried yellow peas (split peas are acceptable)
Onions - chopped fine (2)
Marjoram (1/4 teaspoon)
Thyme (1/2 teaspoon)
Salt
Whole-grain brown mustard
Whole onion - peeled, halved- each half stuck with 1 whole clove (1)
Lean salt pork (1/2 pound piece)
Preparation
Firstly, you would need to soak the peas for at least 12 hours before you begin. Then, drain the peas and place them in a large saucepan.
Pour around 6 cups of cold water with some chopped onions along with the onion halves with the cloves. Once you bring this mixture to a boil, reduce the heat to a medium setting. Then, add some salt pork. Cover the mixture and let it cook for a period of about 90 minutes. You would need to skim off any foam that rises to the surface area. Now, add the marjoram along with the thyme to the pan. Stir this mixture and let it simmer for at least 15 minutes. Add some salt to taste. Then, remove the pork and let it cool down so that you can cut it into pieces. You would need to remove the onion halves along with the cloves. Place the pork in a separate bowl and serve it with the soup over it along with some grainy brown mustard. This recipe tastes great with hot bread.
Swedish Pancake
Ingredients
Eggs - Separated (4)
Flour (1 Cup)
Milk (1 Cup)
Sour Cream (3 Tablespoons)
Lingonberry Preserves
Apple Sauce
Salt (1/2 Teaspoon)
Preparation
First, you would need to beat the egg yolks till it thickens. Then add the flour, sugar and the salt as well. Add the mixture to the egg yolks alternately with some quantity of milk. Then, slowly stir in the sour cream. Beat the egg whites till they stiffen and fold it into the batter. If you have a Swedish pancake pan, heat the pancake pan and butter each depression in it. Then, pour about 1 tablespoon of the batter into each depression and ensure it spreads out evenly. Let it brown on one side. Once done, turn and let it brown on the other side. Serve it with some of the applesauce and the preserves.
