Egg Drop Soup Recipes

Ingredients

  • 3 eggs, beaten
  • 3 cups chicken broth
  • 2 cups water
  • 2 stalk scallion, chopped
  • 1 pound clams
  • 2 tbsp fresh chives, chopped
  • 1 tbsp sesame oil
  • 1/2 teaspoon ground ginger
  • Salt and white pepper
Preparation

In a medium-sized pan, bring the chicken broth and water to a boil. Stir in the sesame oil, ginger and chives into the pan. Sprinkle salt and white pepper. Cook for 2 minutes. Pour a thin stream of the beaten eggs into the broth. In order to make thin shreds, stir the beaten eggs around the pan in a clockwise direction. Let it simmer for 2 minutes. After the eggs are cooked, you can add the clams and the seasonings. Stir in the chopped scallions into the egg drop soup. Remove from heat and serve immediately.

  • 3 eggs, beaten
  • 2 cups chicken broth
  • 4 ripe tomatoes, seeded and chopped
  • 3 slices Italian semolina bread, toasted
  • 5 cloves garlic, minced
  • 2 onions chopped
  • 2 tbsp parsley, chopped
  • 1 bay leaf
  • Salt and pepper
Preparation

Heat oil in a wok or saucepan over medium heat. Add onion and saute, and stir for 3 minutes. Add garlic and stir in tomatoes. After 2 minutes, add the chicken broth, bay leaf and salt. Stir over low heat. Let it simmer uncovered for 10 minutes. Remove bay leaf from the pan and stir in the beaten eggs in clockwise direction. Let it simmer for 3 minutes. Remove from heat. Place a slice of semolina bread in each bowl. Ladle in the soup into the bowl and garnish with parsley. Serve hot.

  • 1 fresh ginger, thinly sliced

  • 1 oz. dried egg noodles

  • 1 tsp soy sauce
  • 2 tsp sesame oil
  • Salt and pepper
Preparation

In a medium-sized pan, heat the chicken stock. Add the sherry, soy sauce, ginger and garlic and bring it to a boil. Stir in the noodles and let it simmer for 5 minutes. Stir the soup in clockwise direction and add the beaten eggs in a steady stream. Simmer uncovered until the eggs are cooked. Remove from heat. Add sesame oil and sprinkle the scallions. Add a dash of pepper and serve hot.

  • 3 dried shiitake mushrooms
  • 2 medium tomatoes, diced
  • 2 cups spinach
  • 2 green onions

Preparation

Soak the mushrooms in hot water for 5 minutes. Drain and discard the stems. Cut the mushrooms into small pieces and keep aside. Bring the vegetable stock to a boil in a medium-sized pan.
