Cookbook Template

Pan-Roasted Pork Loin with Leeks
Ingredients
  • 2-pound boneless pork loin, trimmed
  • 4 large leeks
  • cup dry white wine
  • 1 tablespoon butter
  • teaspoon black pepper
  • cup water
  • teaspoon salt
  • 2 teaspoon chopped fresh parsley
Method
Clean leeks and remove their coarse outer coverings. Cut the leeks into half inch batons. Place them in a bowl and pour water over the leeks to loosen any dirt.

Next saut the leeks with teaspoon butter and add salt and black pepper. When the leeks are softened in butter add cup water. Cook for another 10 minutes and transfer the leek mixture into a bowl. Heat teaspoon butter in a pan and sear the pork loin making sure that you brown all sides evenly. Add teaspoon salt and teaspoon pepper. Pour the dry white wine and allow it to simmer. Return the leek mixture back to the pan. Place the pan in a moderately hot oven for 1 hours until the pork is tender. Remove pork from pan and reduce the leek sauce. Cut pork loins into inch thick slices and add a tablespoon or two of the leek sauce. Garnish with chopped parsley.

Baked Flounder with Dill and Caper Cream
Ingredients
  • 4 flounder fillets
  • cup sour cream
  • 1 tablespoon dill, chopped
  • teaspoon black pepper
  • 2 tablespoons capers, drained
  • teaspoon salt
Method

Sprinkle the flounder fillets with salt and pepper and grill them in the oven for 3-4 minutes on each side. In a small bowl combine the sour cream with the capers and add the chopped dill. Arrange each fish fillet on a plate and add 2 tablespoons of the sour cream.
