Simple Recipes for College Students
Many of the college students that live away from their houses and precious kitchens of their mother, can surely understand the importance of the healthy homemade food recipes that get replaced by not-so-great outside foods. Even college students that have a hectic schedule which simply gives no chance to set back and relax, find it difficult to cook and eat regularly. To save these and many such ordeals, I am here with some easy, scrumptious and simple recipes for college students that can really be a great help.
These shortlisted recipes are basically the food recipes that they regularly have as staple food or in the canteen or nearest joint. The only difference it that these recipes are very easy to make for the college students and that makes these recipes affordable and hygienic. Only precaution that you have to take is the hygiene while preparing chicken recipes and meat recipes. Always wash hands as well as the kitchen utensils before and after preparing the foods. So, without further delay, let's have a look at few of my favorite simple and healthy recipes for college students.
Chicken Taco Soup
Ingredients
- 8 oz skinless and boneless chicken breasts
- 1 chopped onion
- 2 teaspoons of olive oil
- 16 oz beans
- 15 oz pinto beans
- 10 oz diced tomatoes with green chilies
- 1 package of taco seasoning mix
- 2 cups corn kernels
- 2 cups water
Heat a saucepan with olive oil in it. Add chopped onion and stir for 5 minutes. Add the pinto beans, beans, corn, diced tomatoes, water and taco seasoning into it and bring the mixture to boil. Lower the heat and cook for over 10 minutes, with stirring it occasionally. Add cooked chicken pieces and cook for 2 minutes more. Serve when hot.
Tuna Sandwich
Ingredients
- 6 oz light tuna (flaked and drained)
- 1 peeled apple (coarsely chopped)
- cup of chopped carrots
- 3 tablespoons of mayonnaise
- 2 slices of tomato
- 4 slices of bread
Take a bowl and place the light tuna, chopped apple, chopped carrot and mayonnaise into it. Mix it well and spread it evenly on two bread slices. Top each of the slices with the tomato slices and 1 bread slice. Cut into half and serve!
Butter Chicken
Ingredients
- 400 grams of boneless and skinless chicken thighs or breasts
- 8 oz can of whole peeled tomato juice
- 1 large onion
- 2-3 tablespoons of butter
- 2 teaspoons each of crushed ginger and garlic
- teaspoon of turmeric powder
- teaspoon of cinnamon
- 1-2 teaspoons of red chili powder
- cup of ground almonds
- 1 tablespoon tomato paste
- 1 tablespoon of coriander
- cup plain yogurt
Slice onion into wedges and place aside. Also slice the chicken into small cubes, cover it and set aside. Make sure that every time you cut anything, use a clean knife. Heat a large skillet and add the butter into it. When it gets frothy enough, add cinnamon and onion to it, only to fry lightly. When the onion gets soft, add crushed ginger and garlic into it. Stir for a few seconds and add turmeric powder, chili powder and coriander into it. Saut the mixture for a while over medium heat. Now, add chicken pieces and saut the mixture until the chicken turns white in color. Lastly, add tomato paste, tomato juice and ground almonds to the mixture, only to simmer for 20 to 30 minutes. Add yogurt, heat for a few minutes and serve with steaming rice or bread!
Spaghetti Pie
Ingredients
- 6 oz spaghetti
- 1 lb ground beef
- A jar of prepared spaghetti sauce
- 4.5 oz sliced mushrooms (optional)
- cup of sliced celery
- 2 slightly beaten eggs
- teaspoon of garlic salt
- Parmesan cheese
Cook the spaghetti as desired (or as per the instructions on the package), drain and leave aside. Heat a large skillet, add a bit of olive oil and cook ground beef and celery. Add the spaghetti sauce and mushrooms to it and simmer for 15 minutes. Take cooked spaghetti, slightly beaten eggs, garlic salt and 1/3 cup grated Parmesan cheese and toss slightly. Place this spaghetti mixture in greased pie pan by forming a crust. Pour the other mixture over it and cover the pie pan with an aluminum foil. Bake the dish for about 30 minutes over 350F in the microwave. Remove aluminum foil and sprinkle it with really generous amount of Parmesan cheese before serving.
